When you configure your Artusi assignment to allow multiple attempts, Artusi will only update your Canvas gradebook with the grade from the highest-scoring attempt.
When you limit the number of assignment attempts on Canvas, be aware that Artusi has no way of knowing this. The number of assignment attempts that are allowed on Artusi depends entirely on how the Artusi assignment is configured. This means that you will need to configure assignment access separately for your Canvas assignment and the associated Artusi assignment. (The same goes for assignment deadlines.) For example, if you only allow one attempt on Canvas, you can do the same for the Artusi assignment by setting question randomness to "Everyone gets the same questions."
